Another tasty summer favorite from Chef Colin Smith is for flat iron steak, which comes from the vertical part of the shoulder of the cow.

It’s got the texture of a flank steak or a London Broil, but with the flavor of a rib eye. It’s thin, so it cooks quickly on the grill and marinades well.

We take the flat iron steak and add salt, pepper and a few dry rub spices, put it on the grill for 12 minutes and then we wrap it and let it sit.
