As Seen on Fox 11: Corned Beef and Cabbage

If you’re looking for a new way to prepare your Corned Beef & Cabbage this year, Chef Colin has got some ideas.

For Saint Patrick’s Day, you can buy corned beef packaged right at the store. Put it in a pot of water on a slow simmer for about 3 hours.

In the last hour, throw in some potatoes into the corned beef stock and drop some cabbage in there — chop up the cabbage in larger chunks and keep part of the core on the cabbage so it doesn’t fall apart as much.

Chef Colin likes to roast the carrots in the oven. You can put it on 400 to 425 degrees with olive oil, salt and pepper so you get a sweeter carrot. You can also put the potatoes in with them.

Add a whole grain mustard seed sauce — take a little wine and shallots to make a beurre blanc and add some whole gain mustard to it.
