Recipe: Lemon-Parsley Pesto

This parsley and lemon pesto is a yummy, zesty summer recipe that can be enjoyed in many ways. Serve over hot or cold pasta, fish or chicken for a delicious meal.

1 bunch Italian Parsley

¼ cup Parmesan cheese

1/4 cup Extra Virgin Olive Oil

2 Lemons Juice and Zest

1/2 tablespoon Kosher Salt

1/2 teaspoon Cracked Black Pepper

¼ cup pine nuts

Place all ingredients in blender and process for 2 minutes

Do not let the mixture heat up, it will darken the pesto
