As Seen on Fox 11: Savory Waffles
Waffles are not just for breakfast anymore.
The first is a gorgonzola waffle with short ribs on top — cook your short ribs with caramelized onions, a beef demi glaze and red wine. This is a rendition of Chef Colin’s dad’s recipe from the military, called SOS (that used to be served with chip beef!).
The second is a bacon and cheddar waffle with tempura shrimp and a cajun aioli, a Louisiana-style dish. Take your waffle batter and throw it in the waffle maker. You can get real creative and add dried fruit, sugars, honey, etc. Also adding cheeses are fantastic. Make sure you spray the iron with non-stick spray/oil before you use it especially when mixing in cheese. Colin likes to leave the waffles in a little longer, so they’re crispier.
Another great tip is to make these ahead of time, and when you’re ready to serve them, put them in the toaster, then add your toppings.
