When it’s cold outside, we all love to turn to comfort food. But, what about a healthier version of dishes that are still comforting enough to give you a hug?
For beef stroganoff, you can used any type of beef, (Chef Colin is using leftover trip-tip), add thyme, tarragon, onions and shallots. Chef Colin uses yogurt (instead of sour cream), red wine vinegar and a little bit of beef stock.
The fresh herbs make a big difference in a dish like this. Dry herbs are best for a long cooking situation as they go in early and dissipate.
This is whole wheat pappardelle pasta. This dish is under 400 calories and still delightful on a cold winter’s day or night.
