Recipe: Pumpkin Muffins
Get in the pumpkin spirit with this “to die for” recipe for muffins. Enjoy!
(Yield: approximately 2 dozen small or 1 dozen large)
2 1/4 C. Sugar
2 C. Vegetable Oil
4 Eggs
4 C. Flour
1 T. + 1 t. Baking Powder
1/2 t. Salt
1 T. Cinnamon
1 t. Ground Ginger
1 t. Nutmeg
1 t. Vanilla Extract
1 C. Pumpkin Puree
1 1/3 C. Whole MIlk
Mix together sugar, oil and eggs. Whisk until combined.
Add rest of the ingredients and mix until it becomes a smooth batter.
Bake at 350″ F for 15-18 minutes until it springs back or a skewer comes out clean.
Can be topped with streusel or crystal sugar.
