Recipe: Oatmeal Turkey Sausage Sage Stuffing

3 cups cooked oatmeal, quinoa or wild rice
2 cups cooked and diced butternut squash
2 tablespoons Extra Virgin olive oil
1 cup diced celery
6 oz. turkey sausage
1 cup diced onion
1 tablespoon fresh chopped sage
2 each, peeled and diced pear
1 qt. of chicken stock
2 tablespoons chopped parsley
1 tablespoon salt, 1 teaspoon pepper
Cook oatmeal/quinoa/wild rice according to directions. Peel and dice butternut squash and toss in 1 tablespoon of olive oil and roast at 350 degrees until tender approximately 20 minutes
Heat olive oil in large pot and add onion, celery and sausage with fresh herbs and cook for 6 minutes. Then add chicken stock and pear, and with a ladle, skim off excess olive oil and fat from sausage.
Then add rice and butternut squash and simmer. Place in a shallow baking dish or in a precooked turkey and enjoy.
