Speedy Shrimp Scampi Recipe

Shrimp Scampi

Prep in advance:
Chopped shallots
Chopped tomato
Parsley
Asparagus

Add butter to pan
Add shrimp scampi
Add shallots, tomato, parsley and asparagus
Blanch a bit
Add white wine — this will poach the shrimp

Add cooked angel hair pasta to the pan
Add a little salt
Add a little garlic, cream or butter as desired

Cooking time: 3-5 minutes (don’t overcook!)
