As Seen on Fox 11: Spiced Sponge Cake
Jamie Maxfield, pastry chef, brought in a lovely seasonal dessert, a spiced sponge cake.
It has cream cheese icing, cranberry caramel and dehydrated apple chips. It sounds complex, but it is pretty simple to make with a basic sponge cake and cream cheese icing. If you have a dehydrator, it will be easier to dehydrate the apples. You can make an apple compote or use oranges instead. You can also buy apple chips as an alternative, or bypass this ingredient all together (it is mostly for the garnish to add crunch on top).
The cranberry caramel can be made from cranberry sauce by adding sugar and bringing it to a soft boil stage, then combining the two. The spices in the light and airy sponge cake consist of cinnamon, nutmeg, ginger, cloves and all-spice.
