Recipe: Apple Cider Brined Rack of Pork with Butternut Squash Risotto
Thursday’s on Mornings on Fox 11 with Melissa Carlson are officially “Tasty Thursdays” once again! Every other Thursday Chef Colin will join us Fox 11 the show.
Here is the recipe for the delicious risotto:
1 cups fresh peas
1 cup Roasted Butternut Squash – peel and dice and roast for 20 min. at 350 degrees
3 T extra virgin olive oil
5 oz. Neuskis Bacon
½ cup onion
3 cloves garlic
1t fresh thyme
2 cups Arborio rice
1 cup white wine
6 cups chicken stock
Salt/pepper
2 T mascarpone cheese
2 T parmesan cheese
1 t chives
Method:
Place bacon on sheet pan and bake until lightly crispy – remove-drain-chop
Add extra virgin olive oil to pan and sauté onions and garlic with fresh thyme 3 minutes until translucent- add Arborio rice and toast in pan for 3 minutes then wine and cook until wine has evaporated, then add chicken stock 1 cup at a time. Continue stirring until stock disappears and add more stock. Continue this process until the stock is absorbed.
Stir in fresh peas, bacon and squash until incorporated, then add mascarpone and parmesan.
Serve immediately.
